Kaju Katli

You might have heard about kaju katli and many different different variants of kaju katli. Kaju katli is a very famous sweet in India. It is a sweet which can be prepared easily without much ingredients. 

Ingredients :-

  • Kaju (cashews)
  • Sugar 
  • Water 
  • Saffron
  • Milk 
  • Cardamom 
  • Silver foil

Procedure:-

  • Take 200g cashews or kaju and put it in a hot pan and start roasting it.
  • Roast the cashews for 1  minutes on low flame. So that it will have some crunchy texture 
  • Split this into two parts and when they got cool start blending them to make powder
  • Do not blend for a long time because it's color and taste will change due to release of oil
  • The powder should be grainy but not like a flour
  • Pour 1-2 cup of sugar in a nonstick pan and pour some water in it 
  • Do not pour too much water because it will take long time to boil and it's color will start changing
  • Start boiling it until its texture turns thicker and the sugar got dissolved completely
  • Add the sugar syrup in the cashews powder in some intervals so that it will not cause any lumps in it
  • Keep mixing the kaju and sugar syrup batter at low flame
  • Add some ghee and continue to heat it on the pan 
  • Add cardamom powder
  • When the mixture come together and leave the pan
  • Put it on a butter paper and when it's temperature cools down, its texture will change to smooth
  • Cover the batter with another butter paper and roll it 
  • Cut it into many shapes like parallelogram
  • Put some chocolate or liquid saffron(add milk to liqifie it) on the the batter 
  • Now your kaju/cashews katli is ready 
  • Cover one side of katli with silver foil
